These feel good, and look good, but squeak really loud when I walk on the tile floors at work

Weight date Wednesday

No, once again I didn't loose any weigth. But, I really did not try. However, I have not gained any, which is surprising.  Guess I worked off a lot of calories at work. :)

Grilled Salmon Salad

Mostly, I laid on the couch today. Long 4 days at work and very tiring. 

Tonight we grilled salmon. First make slits in the salmon cross ways. Not all the way through, just to before  you get to the skin. Make a slit about every inch. dash with garlic power, white pepper, lemon pepper and squeeze fresh lemon and lime and let sit for a couple hours, if you have time. For the asparagus I usually use the thinest ones I can find. But tonight I used fat ones (they were so good). Trim the ends off the asparagus (about 1-2 inches). Sprinkle with sea salt, white pepper and olive oil and coat. Get grill very hot, around 350-400. We used a flat flexible grilling basket. Spray it with pam (if you don't having a grilling basket, spray the grill with pam, but stand back, cause it will throw off flames).  Put salmon in one of basket and asparagus on other side (see pic). Grill skin side up for two minutes, turn and grill for 5 minutes with lid closed. Remove and let rest for 7 minutes. If you don't us a grill basket, when you remove the salmon, slide the spatula between salmon and skin and lift.
I had mine on a salad with home made dressing
three mandarin oranges, pinch sea salt, one strawberry, very small splash of rice vinegar and about 1 TBsp so olive oil. Blend with hand blender. makes enough for 1.

Romane lettuce, mandarin oranges, goat cheese, sliced strawberries, asparagus, salmon, drizzle dressing over salmon and salad, and enjoy

For snack in the afternoon I had 4 cookies, popcorn, mixed nuts and a beer.

Lunch was a delicious tuna salad

I did not eat breakfast, But I did have three cups of coffee over about 3 hours. It was so, so good.

YIKES, No I didn't make the carb challenge, today

So, today me and Jerre went to Waffel house. We both had a Bacon Lover's BLT with double hash browns, nothing added, oh. oh my, it was so good. and yea I ate almost al off it. trying to up load pic, but verizion is not co-operating.

OOPS!!!!! Forgot to add an ingredient

Last night I forgot to add olive oil to the ingredients list on my mandarin orange strawberry salad dressing.  go back and check it out. It is there now.

What I ate Wednesday, Feb 22

Ok, so I know I haven't posted in about a week. I eat a lot of the same thinks. And it really is quite a chore take pictures of every meal with preparations, especially when you work 12-16 hours a day, and out of town. So, unless I have something really fabulous to post I am gonna just post Wednesdays (that is my plan, anyway). I am not posting a pic for this week. I have not lost weight and have had an allergic reaction, So my face is red and swollen on one side (Not a pretty site). Although, I went on a kinda carb binge this week, for 2 days (pizza, m&m's, chocolate covered cookies, popcorn (although, corn is a veg), I have not gained any weight, either.

Breakfast this am was a delicious omelet with spinach sauteed in evoo, sea-salt, white pepper. Omelet, two eggs, spinach, extra sharp cheddar cheese and bacon. I fry my bacon like I fry french fries. that way you don't have to keep flipping the bacon. It cooks evenly, this way. I have blue cheese in the first picture, but did not use it.


Lunch, chopped chicken salad lettuce wrap. I chopped one left over grilled chicken thigh, celery, grape tomato's, sliced, scallion, chopped, mayo, sea-salt and coarse black pepper, mix and plop in washed lettuce leaf's. Grab some water and enjoy.

Dinner will be left over beef bottom roast. I rubbed my roast with eevo, sea-salt, black pepper and garlic. Add about 1" of water. put lid on and cook at 400 degrees for about 1.5-2 hours. Internal temp of roast should be around 140 degrees. It will sear on the bottom of the roast. I cooked it for about 2 hours and it was a little over done, but still very good. I served left over "mock mashed potato's". Boil a whole head of cauliflower, mash, add as much real butter, sour cream, salt and black pepper as you want. Left over seared brussel sprouts, and broccoli with cheese sauce.
