Weight date Wednesday

No, once again I didn't loose any weigth. But, I really did not try. However, I have not gained any, which is surprising.  Guess I worked off a lot of calories at work. :)

Grilled Salmon Salad

Mostly, I laid on the couch today. Long 4 days at work and very tiring.

Tonight we grilled salmon. First make slits in the salmon cross ways. Not all the way through, just to before  you get to the skin. Make a slit about every inch. dash with garlic power, white pepper, lemon pepper and squeeze fresh lemon and lime and let sit for a couple hours, if you have time. For the asparagus I usually use the thinest ones I can find. But tonight I used fat ones (they were so good). Trim the ends off the asparagus (about 1-2 inches). Sprinkle with sea salt, white pepper and olive oil and coat. Get grill very hot, around 350-400. We used a flat flexible grilling basket. Spray it with pam (if you don't having a grilling basket, spray the grill with pam, but stand back, cause it will throw off flames).  Put salmon in one of basket and asparagus on other side (see pic). Grill skin side up for two minutes, turn and grill for 5 minutes with lid closed. Remove and let rest for 7 minutes. If you don't us a grill basket, when you remove the salmon, slide the spatula between salmon and skin and lift.
I had mine on a salad with home made dressing
three mandarin oranges, pinch sea salt, one strawberry, very small splash of rice vinegar and about 1 TBsp so olive oil. Blend with hand blender. makes enough for 1.

Romane lettuce, mandarin oranges, goat cheese, sliced strawberries, asparagus, salmon, drizzle dressing over salmon and salad, and enjoy

For snack in the afternoon I had 4 cookies, popcorn, mixed nuts and a beer.

Lunch was a delicious tuna salad

I did not eat breakfast, But I did have three cups of coffee over about 3 hours. It was so, so good.

What I ate Wednesday, Feb 22

Roll Tide
Ok, so I know I haven't posted in about a week. I eat a lot of the same thinks. And it really is quite a chore take pictures of every meal with preparations, especially when you work 12-16 hours a day, and out of town. So, unless I have something really fabulous to post I am gonna just post Wednesdays (that is my plan, anyway). I am not posting a pic for this week. I have not lost weight and have had an allergic reaction, So my face is red and swollen on one side (Not a pretty site). Although, I went on a kinda carb binge this week, for 2 days (pizza, m&m's, chocolate covered cookies, popcorn (although, corn is a veg), I have not gained any weight, either.

Breakfast this am was a delicious omelet with spinach sauteed in evoo, sea-salt, white pepper. Omelet, two eggs, spinach, extra sharp cheddar cheese and bacon. I fry my bacon like I fry french fries. that way you don't have to keep flipping the bacon. It cooks evenly, this way. I have blue cheese in the first picture, but did not use it.

Lunch, chopped chicken salad lettuce wrap. I chopped one left over grilled chicken thigh, celery, grape tomato's, sliced, scallion, chopped, mayo, sea-salt and coarse black pepper, mix and plop in washed lettuce leaf's. Grab some water and enjoy.

Chopped grilled chicken salad lettuce wrap (next time I think  I will add grapes, walnuts and almonds).

Dinner will be left over beef bottom roast. I rubbed my roast with eevo, sea-salt, black pepper and garlic. Add about 1" of water. put lid on and cook at 400 degrees for about 1.5-2 hours. Internal temp of roast should be around 140 degrees. It will sear on the bottom of the roast. I cooked it for about 2 hours and it was a little over done, but still very good. I served left over "mock mashed potato's". Boil a whole head of cauliflower, mash, add as much real butter, sour cream, salt and black pepper as you want. Left over seared brussel sprouts, and broccoli with cheese sauce. (will try to update recipe page, soon)

left over mock mashed potato's, left over sauteed brussel sprouts, broccoli with cheese sauce (steamers).

I did not trim the fat

Day 30, Mock Perlo Rice, Low Carb

boiling cauliflower till tender, not soft and pressure cooking pork back bone with meat about 45 minutes.

Zap cauliflower in food processor a couple times. it will be rice size.

When meat is done remove to plate and save broth. (for recipe with rice leave comment).

The bone should release from meat when you pick it up. Remove bone and separate meat with fork

put a little broth in bowl, add cauliflower and some meat and more broth to consistency you like. I like mine kinda soupy.

Add salt (not much) and black pepper to taste.
I usually salt things once I have them on my plate. I don't usually use a lot of  salt so I don't usually salt while I am cooking.

yOU Can do this with chicken, also.
ENJOY!

Day 30 Worst green drink ever.

Of course, I started the day off with two cups of coffee and coffee mate.

I made the worst green drink ever this morning. And my hand held blender works much better than the regular blender.

Kale, celery, grape tomato's, blueberries, cilantro, nutmeg, cinnamon, ginger and garlic and S. Pelligrino. I think the garlic is what made it so bad. From now on I think I will just stick to fruit, veg's and fresca. I did drink it, anyway.

Lunch was at Cheddars restaurant, Salad and swish mushroom burger without the bread. I had unsweet rasberry tea to drink. It was very good.......

Planning dinnner: Mock perlo Rice. I will making perlo rice with Pork back bone meat and cauliflower.  will post later tonight. probably after 2200

So the mock perlo rice turned out great. See new post for more pics and recipe.

Bedtime snack 6 small squares of

Lunch was left over grilled salmon from outback, and some sauteed kale and spinach I made last night. Just add a little olive oil, crushed garlic, and white pepper and throw all ingredients in a pan a and stir a couple times, but till soft/crisp. Boiled carrots, Just add real unsalted butter (I like land o lakes), and white pepper, to taste.
